Apple Chicken Stir Fry

Boneless, skinless chicken breast pieces stir-fried with apple, onion, carrot and chinese pea pods. Served over hot, fresh steamed rice.
Ingredients -
1 pound cubed Boneless, Skinless, Chicken Breast
1-1/2 tablespoons Vegetable Oil
1/2 cup Onion, vertically sliced
1 cup Carrots, thinly sliced
1 teaspoon Dried Basil, crushed
1 cup Fresh or Frozen Chinese Pea Pods
1 tablespoon Water
1 medium Apple, cored and thinly sliced
2 cups Cooked Rice
 
Preparation:

1. Add 1-tablespoon vegetable or peanut oil to wok.

2. Heat over medium high heat.

3. Stir-fry chicken breast pieces until lightly browned. Remove from wok.

4. Add onion, carrots and crushed dried basil to wok. Stir-fry until carrots are crisp tender.

5. Stir in pea pods. Stir-fry additional 2 minutes.

6. Remove wok from heat. Stir in apple slices. Return chicken to wok. Stir to combine.

7. Serve over hot cooked long grain white rice.

Hot Wok

Heat your wok until it is very hot before adding any oil. This ensures an even heat and prevents food from sticking.
