Asparagus Chicken Stir Fry

Bite size asparagus and chicken breast pieces stir-fried and tossed with sauce prepared from Hoisin sauce and brown sugar. Served hot over Chinese white rice.

Ingredients -
1/2 pound Fresh Asparagus, tough bottoms trimmed and cut into 1-inch bite size pieces
3 tablespoons Hoisin Sauce
1 tablespoon Brown Sugar
4 tablespoons Peanut Oil, divided
2 Skinless, Boneless Chicken Breast Halves, cut into thin 1-inch strips
Hot Cooked Chinese White Rice
 
Preparation:

1. Add Hoisin sauce and brown sugar to small bowl. Stir to combine. Set aside.

2. Heat wok or large skillet over medium high heat.

3. Add 2 tablespoons of peanut oil to hot wok.

4. Add asparagus pieces and stir-fry 2 minutes. Remove to bowl.

5. Increase heat to high.

6. Add remaining 2 tablespoons of peanut oil.

7. Stir-fry chicken pieces 2 to 3 minutes or until the chicken is no longer pink.

8. Remove wok from heat. Stir in asparagus and reserved sauce. Stir to combine.

9. Serve over cooked Chinese white rice.

The first woks were made of iron, later they were also made from carbon steel, stainless steel and aluminum. A carbon steel wok is a good choice, as it conducts almost instantaneously.

The shape of a wok allows food to be tossed quickly, or stir-fried, through small amounts of oil. The food cooks quickly and does not soak in excess oil.
