Chicken Chow Mein

Chicken breast strips stir-fried with snow peas, and scallions in garlic, ginger, soy sauce, and sherry. A classic Chinese dish, served in nearly every Chinese restuarant. A wonderful entree to create at home.
Ingredients -
1 pound Boneless Skinless Chicken Breasts, cut into thin strips
2 cloves Garlic, minced
2 tablespoons Peanut Oil, divided
1/4 cup Soy Sauce
2 tablespoons Dry Sherry
2 cups Fresh Snow Peas or 1 package (6 ounces) Frozen Snow Peas, thawed, cut into halves
3 Scallions, cut diagonally into 1-inch pieces
6 ounces uncooked Chinese Egg Noodles, cooked, drained and rinsed
1 tablespoon Dark Sesame Oil
 
Preparation:

1. In a medium bowl rub garlic into chicken.

2. Heat 1 tablespoon peanut oil wok over medium high heat.

3. Add chicken. Stir-fry 3 minutes or until chicken is no longer pink

4. Remove chicken from wok.

5. Toss chicken with soy sauce and sherry.

6. Heat 1 tablespoon peanut oil wok over medium high heat.

7. Add snow peas to wok. Stir-fry 2 minutes or until crisp-tender.

8. Add scallions to wok. Stir-fry 30 seconds.

9. Add chicken to wok. Stir-fry 1 minute.

10. Add Chinese noodles to wok. Stir-fry 2 minutes.

11. Stir in sesame oil.

12. Serve hot.

Peanut Oil
Peanut has a high smoking point, and is a favorable choice for stir-frying, as is extra light olive oil, which imparts great flavor when stir-frying vegetables.

Dark Sesame Oil
The sesame oil is added last and can be added after the wok has been removed from the heat. Dark sesame oil adds great flvor but burns easily.

Chinese Egg Noodles
Chinese egg noodles come in both round bird nest like noodles and long straight noodles. Find the round version if possible.
