Lime Chicken Broccoli Stir Fry

Boneless, skinless, chicken breasts marinated in an olive oil and garlic mixture. Stir-fried and topped with broccoli and walnut mixture.
Ingredients -
Lime Chicken Breast:
4 Boneless, Skinless, Chicken Breasts (each 1/2 pound), pounded thin
1/3 cup Olive Oil
Juice of Three Fresh Limes
4 cloves of Garlic, peeled and minced
3 teaspoons Fresh Cilantro, chopped
1/2 teaspoon Salt
1/2 teaspoon Fresh Ground Black Pepper

Stir Fry:
1-1/2 teaspoons Sesame Oil
1/2 teaspoon Chili Oil
dash Garlic Powder
4 cup Fresh Broccoli
1/4 cup chopped Walnuts
1 teaspoon Soy Sauce

 
Preparation:
1. Add olive oil, fresh lime juice, minced garlic, chopped fresh cilantro, salt and pepper to medium bowl.

2. Add chicken breasts to marinade. Cover with plastic wrap and marinate in refrigerator for minimum two hours.

3. Remove chicken breasts from marinade and transfer to broiler pan.

4. Broil 5 minutes per side or until chicken is cooked through. Remove from broiler, set on serving platter

5. Add sesame oil and chili oil to wok. Heat over medium-high heat. Add dash garlic powder.

6. Lower heat to medium.

7. Add fresh broccoli and walnuts to wok. Stir-fry four minutes.

8. Stir in soy sauce. Stir-fry additional minute.

9. Serve chicken breasts, topped with walnut broccoli stir fry.

Flavored Oil
When you flavor your oil with garlic, ginger, red chilies, or salt, always add them before the oil gets too hot. This prevents these ingredients from burning and making the oil bitter.

Thickening Mixtures
Before adding thickening mixtures like cornstarch and water to stir-fry dishes, remove the wok from the heat for a minute, otherwise sauces can end up lumpy.
