Mandarin Orange And Cashew Chicken Stir Fry

Chicken, mandarin oranges, cashews, white onions, and fresh pea pods, in a garlic stir-fry sauce.
Ingredients -
1 (11 ounces) can Mandarin Oranges, drained, reserve 2 tablespoons syrup
1/4 cup Stir Fry Sauce
3 tablespoons Oil
2 Whole Boneless, Skinless Chicken Breasts, cut into strips
1/3 cup Cashews
1 clove Garlic, minced
1 small White Onion, sliced
1/2 pound Fresh Snow Peas (or 1 box Frozen Snow Peas)
 
Preparation:

1. Combine reserved mandarin orange syrup with stir-fry sauce.

2. Heat 2 tablespoons peanut oil in wok over high heat.

3. Add chicken, garlic, and cashews. Stir-fry 3 minutes. Remove from wok. Set aside.

4. Add white onion and snow peas. Stir-fry 3 minutes.

5. Add chicken, cashews, and garlic back to wok.

6. Add orange stir-fry sauce mixture to wok.

7. Stir-fry to coat chicken and vegetables with sauce.

8. Add oranges and immediately transfer mandarin orange stir-fry to serving platter.

9. Serve over rice.

Cooking Tip

Stir-Fry Sauce
Heat 1 1/2 teaspoon sesame oil in a small saucepan. Add 1/2 teaspoon minced garlic and 1/2 teaspoon minced ginger and saute 15-30 second over medium heat to bring out the flavor. Add 1/2 cup chicken broth, 1 tablespoon brown sugar, 1 tablespoon soy sauce, 1/2 teaspoon salt, 1/8 teaspoon Tabasco, 1/4 teaspoon pepper, and 1 1/2 teaspoon fresh lemon juice. Bring just to a boil, stirring. Dissolve 1 1/2 teaspoon cornstarch in 1 tablespoon rice wine and whisk into the sauce. Heat until sauce thickens and reaches a full boil.

Mandarin Oranges
Add the oranges and toss at the very last moment as the oranges will begin to breakdown.
